Gourmet vanilla beans undergo a drying process of up to 33%, while TK vanilla beans are dried to 28%. Although derived from the same planifolia bean variety, the additional degree of drying on gourmet beans not only modifies their categorization, but also their vanillin content. Indeed, the more a pod is dried, the more its vanillin content intensifies, which has a direct impact on vanilla aroma and quality.

It is essential to note that, despite the identical bean variety, the degree of drying significantly influences the classification of vanilla.

Why are some vanilla beans shorter?It is incorrect to state that the vanilla plant exclusively produces pods measuring 15 cm or more.
